Ever wonder how to make the BEST grilled cheese sandwich that ever existed? I asked, and I found out. Never really liked grilled cheese? (What kind of monster are you?) This recipe will change your mind.

First and foremost, I love grilled cheese. It’s the best thing since sliced bread (😂). Grilled cheese is hands down the easiest three second meal to make (and eat) when you are lazy and don’t want to get off the couch. Plus, I have a family secret that will make you want to eat grilled cheese for the rest of your life. 

Bread

My all-time favorite bread to use is sourdough. It adds a great flavor and it holds up really well with the melty cheese. Not fancy enough to have sourdough lying around? Plain ol’ white bread is perfectly fine and delicious. 

Cheese

The best cheese for this is a sliced cheese that melts very easily, and has a nutty taste to compliment the sourdough. My favorite is Fontina cheese. A cheese that melts well is ideal because the bread browns really quickly. Bread burns when your cheese hasn’t melted yet but the bread is well over-cooked. 

My top 5 grilled cheese cheeses to use:

  1. Fontina
  2. Mozzarella 
  3. Monterey Jack
  4. Provolone
  5. Munster

You can mix and match your favorite cheeses and play around until you’ve found the perfect combo.

Fat

Most people would say that the obvious fat to use is butter. But this is where the family secret comes in. After you read what the secret ingredient is, you might think “What? This blog is ridiculous, I’m going to a different website.” But trust me on this one, you will thank me later. 

It is…. Dun Dun Dun….. MAYONNAISE!

When you think of mayonnaise, you might say that it is quite a boring and heavy condiment that sits next to king ketchup. But here are the reasons you should 100% spread a thin layer of mayo on your bread next time you make grilled cheese:

1. Mayo spreads way better than butter

2. It has a higher smoke point (meaning it won’t burn as easily).

3. The oil and egg in mayonnaise brown nicely and add a creamy flavor to the crust. 

Not a fan of mayo? Still try mayo. It does not taste like it AT ALL, and it’s really worth it.

Cooking

Now that we’ve got all of our ingredients, it’s time to assemble the sandwich and cook it to perfection. 

Spread a thin and even layer of mayonnaise on one side of 2 pieces of sourdough bread. 

Next, with the mayo sides on the outside of the sandwich, add the cheese(s) of your choice. Heat a pan on medium heat for one minute before placing the sandwich with one mayo side touching the pan and the other facing up. 

Lightly press down on the sandwich with a spatula as it cooks to ensure an even browning and perfectly melted cheese. After 1-2 minutes, or when you like how it browned, flip the sandwich over and cook for another minute.

As it cooks, dance around your kitchen like a crazy weirdo, but not too long that your sandwich burns. 

Take the grilled cheese off of the heat, and enjoy you cheesy goodness. 

Want to take it to the next level? Here are some ideas:

pair it with tomato soup.

add whatever fruits or veggies you love like caramelized onions, avocado, tomato, broccoli, etc.

add spices like basil, oregano, and thyme.
